an easy yum chicken that is full of flavour.

Ingredients
  • 4 Chicken bottoms
  • 1 tbs olive oil
  • 1/4 tsp chili flakes - you really need this as it adds a lot of flavour - don't put too much in or it will be too hot to eat
  • 1tsp sweet paprika
  • 1tsp ground cumin
  • 1tsp ground coriander
  • 400 gram sweet pot peeled and chopped - i added parsnip as well
  • 1/4 cup chicken stock
  • 1 x 400g chopped / crushed tom

Directions
  1. put oil and spices in bowl, add chicken and coat.
  2. In a dish put sweet pot, tomatoes, and chicken stock then put chicken on top.
  3. bake for 1 1/2- 2 hrs. depending on the size of the chicken, the last 1/2 hr. should be uncovered
