Mixed Pancit Recipe
This comes from my friend Kiran. This is a very good dish. I can't decide if it needs to be classified as a side or as a main dish, but whichever way you serve it you will love it. Enjoy

Ingredients
  • 6 ounces bean thread noodles
  • 1 cup cooked pork thinly sliced
  • 3 cloves garlic minced
  • 1 medium onion sliced
  • 4 cups chicken broth
  • 3 celery stalks thinly sliced diagonally
  • 1-1/2 cups carrots thinly sliced
  • 3 cups cabbage thinly sliced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Soak bean thread noodles in water until soft then drain and cut into 6” length with scissors.
  2. Cook noodles in seasoned broth and 1 tablespoon soy sauce until liquid has been absorbed.
  3. Stir carefully during cook until noodles are done then set aside.
  4. In a nonstick large pan over medium heat sauté garlic in oil until lightly browned.
  5. Add onion then stir 1 minute.
  6. Add pork chicken, celery, carrots, cabbage, 1 tablespoon soy sauce and a little salt and pepper.
  7. Simmer 8 minutes or until vegetables are crisp-tender.
  8. Combine cooked noodles with meat and vegetable mixture.
  9. Stir carefully taking care not to mash noodles until well blended then serve warm.
