How to make it

  • cut peel off of watermelon, cantaloupe and avocado
  • slice fruit into flat pieces 1 1/2" wide
  • slice feta cheese into similar shaped pieces
  • top with mint leaves and pico de gallo
  • whisk together lemon and olive oil, add salt and pepper
  • lightly dress and toss all ingredients together, or layer to serve on individual plates
