Grilled Lamb Chops

- Rib lamb chops - as many as people for appetizer, more if main course shopping list
- onion - 1/2 medium, chopped fine shopping list
- garlic paste - 2T (or equal amount of fresh chopped) shopping list
- salt - 2t shopping list
- black pepper - 1t shopping list
- cinnamon - 1/4 t shopping list
- allspice - 1/4 t shopping list
- lemon juice - 2T shopping list
- preserves - 3T (I used Peach-Mango-Orange from Costco) shopping list
- olive oil - 2T shopping list
- (Note that all measurements are adjustable to your taste. shopping list
How to make it
- Cut lamb chops into individual pieces.
- Place meat end down into gallon Ziplock bag.
- Make marinade by mixing together all other ingredients. Note that the marinade will taste a bit too salty, but that upon cooking that will not be an issue.
- Pour marinade into bag, seal, and refrigerate for at least a few hours.
- Heat gas grill on high. This would be a medium charcoal heat.
- Place chops on grill for about 5 minutes. Turn and grill another 5 minutes.
- Note that flare ups are not a problem nor is overcooking as lamb is very oily and will stay wonderful pretty much in spite of your cooking efforts.
- Place in radiating pattern on serving platter.
- Enjoy the comments of your guests
- Note that if you pan sear the chops you may want to sear the bones for a few seconds using a kitchen torch.
