Yellow Wax Bean and Radish Salad with Cannellinis

- 2c dried cannellini beans(12 oz),soaked overnight and drained shopping list
- 1 small yellow onion,peeled and halved shopping list
- 1 small carrot shopping list
- 1 small celery rib shopping list
- 1Lb. yellow wax beans shopping list
- 1/2c extra virgin olive oil shopping list
- 1/4c red wine vinegar shopping list
- 1Tbs. fresh squeezed lemon juice shopping list
- salt and pepper shopping list
- 8 radishes,sliced 1/4" thick shopping list
- 1small red onion,thinly sliced shopping list
- 1/3c small basil leaves or chopped basil shopping list
How to make it
- In a large saucepan,cover the drained cannellini beans with 2" water. Add the yellow onion,carrot and celery and bring to a boil. simmer over low heat,stirring occaasionally till the cannellinis are tender,about 1 hour and 15 mins. Drain the cannellinis and discard the onion,carrot and celery
- Meanwhile,bring a large saucepan of salted water to a boil. Fill a large bowl with ice water. Add the wax beans to the saucepan and cook till just tender,3 mins. Drain the beans and chill quickly in the ice water. Drain and pat dry.
- In a small bowl,combine olive oil with the vinegar and lemon juice and season with salt and pepper.
- In a large bowl,toss the cannellini beans with the vinegar and lemon juice and season with salt and pepper.
- In a large bowl,toss the cannellinieans with the wax beans,radishes,red onion and basil. Add the vinaigrette and toss to coat. Season with salt and pepper and serv right away.
- To save time, substitute canned cannellinis for the dried ones.
