How to make it

  • Peel the potatoes if using russet, if using red or yellow leave skins intact.
  • Cut each potato into cubes.
  • Cook in boiling water for 20 minutes.
  • Drain water from potatoes and allow to cool completely.
  • In a large bowl, combine the remaining 8 ingredients.
  • Sprinkle with paprika and serve immediately or chill.
