ASPARAGUS WITH BLACK BEANS AND BEEF This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Martinez Estate in Mansfield, Texas in 1994.

Ingredients
  • 1/2 pound beef sliced
  • 1 pound asparagus
  • 1/4 teaspoon baking soda dissolved in 2 teaspoons water
  • 1 tablespoon Chinese fermented black beans minced with 4 garlic cloves
  • 1 teaspoon rice wine
  • 2 teaspoons soy sauce
  • Peanut oil
  • Marinade for Beef:
  • 1 teaspoon cornstarch
  • 1 teaspoon soy sauce
  • 1/2 teaspoon rice wine
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • Gravy Mixture:
  • 1 teaspoon cornstarch
  • 1/3 cup water

Directions
  1. Cut beef when it is partially frozen and cut it across grain into thin slices.
  2. Stir baking soda solution into beef then stir in marinade.
  3. Stir in 1 teaspoon peanut oil and marinate beef for one hour or more in the refrigerator.
  4. Heat 1 tablespoon peanut oil over high heat then add 1/2 teaspoon salt.
  5. Stir in asparagus then add 1/4 cup water and cover pan for 2 minutes without lifting lid.
  6. When done remove to a platter.
  7. Over high heat add 1 tablespoon oil then stir rinsed black beans and garlic mixture.
  8. Stir for a few seconds then add beef and stir fry quickly until barely done.
  9. Sizzle in 1 tablespoon rice wine and 2 teaspoons soy sauce then stir in asparagus.
  10. Add gravy mixture and stir until thickened then serve hot.
