Celery Victor Recipe
Celery is rarely used in a highly creative fashion. Serve this as an appetizer and let your guests get a surprise.

Ingredients
  • Celery, cleaned and washed, as needed.
  • Veal stock. (Chicken stock may be substituted)
  • Salt
  • Pepper
  • Rosemary
  • White Wine Vinegar
  • Extra-Virgin Olive oil
  • (all amounts depend on amount cooked)

Directions
  1. Place the celery stalks in a large pot.
  2. In a separate pot, boil the stock, and pour over the celery.
  3. Let the celery steep in the stock until soft.
  4. While steeping, mix 1 part vinegar to 3 parts oil.
  5. Remove celery, and press softly to squeeze out the stock.
  6. Arrange celery on a plate, and season with salt, pepper, and rosemary.
  7. Serve with the vinegar/oil.
