BACON AND POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stewart Estate in Quinlan, Texas in 1994.

Ingredients
  • 1 pound bacon
  • 1 white onion chopped
  • 8 eggs beaten
  • 1 pound russet potatoes peeled and grated
  • 2-3/4 cups sharp cheddar cheese grated
  • 1 teaspoon freshly ground black pepper

Directions
  1. Preheat oven 350 then grease rectangular glass baking dish.
  2. Microwave bacon then remove and drain well.
  3. Add onion to bacon fat then microwave 2 minutes and remove.
  4. Combine eggs, potatoes, cheese and pepper then crumble bacon and mix into egg mixture.
  5. Add onions then pour into prepared baking dish and bake 45 minutes then cut into squares.
