Baked Lemon Chicken Recipe
BAKED LEMON CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pillar Estate in Fort Worth, Texas in 1988.

Ingredients
  • 4 boneless chicken breasts
  • 1 stick butter
  • 1/3 cup lemon juice
  • 1/2 cup flour
  • 1/2 cup minced onion
  • 1 clove minced garlic
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Bone and pound chicken breasts then dredge with flour.
  2. Melt butter in a baking pan.
  3. Coat chicken on all sides turning skin side up then bake at 375 for 30 minutes.
  4. Brush occasionally with pan drippings.
  5. Meanwhile make lemon baste by mixing lemon juice, minced onion, garlic and salt and pepper.
  6. Brush chicken with part of the baste and bake brushing with remaining baste 30 minutes longer.
