MEDITERRANEAN STYLE BEEF STIR FRY This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981.

Ingredients
  • 12 ounces boneless beef top round steak cut 3/4" thick
  • 2 garlic cloves minced
  • 1 yellow summer squash halved lengthwise and cut diagonally
  • 2 cups broccoli flowerettes
  • 1 teaspoon olive oil
  • 1 cup cherry tomatoes halved
  • 1/3 cup Italian salad dressing
  • 1/4 cup green onions thinly sliced
  • 6 ounces fettuccine cooked and drained
  • 1 tablespoon parmesan cheese

Directions
  1. Trim fat from beef then thinly slice beef across grain into bite size strips.
  2. Spray a wok or large skillet with nonstick cooking spray.
  3. Heat over medium heat then stir fry garlic for 15 seconds.
  4. Add squash and broccoli then stir fry 4 minutes and remove from walk.
  5. Add oil to wok then add beef and stir fry 4 minutes.
  6. Return vegetables to wok then add cherry tomato halves, salad dressing and green onions.
  7. Toss to mix then cover to heat through.
  8. Serve over hot pasta and sprinkle with parmesan cheese.
