Patchwork Casserole

- 2 lbs ground beef shopping list
- 2 cups chopped green bell pepper shopping list
- 1 cup chopped onion shopping list
- 2 lbs frozen southern style hash-brown potatoes, thawed shopping list
- 2 cans (8 oz) tomato sauce shopping list
- 1 cup water shopping list
- 1 can (6 oz) tomato paste shopping list
- 1 t salt shopping list
- 1/2 t dried basil, crumbled shopping list
- 1/4 t ground black pepper shopping list
- 1 lb pasteurized process American cheese, thinly sliced, divided shopping list
How to make it
- Pre-heat oven to 350 F
- Cook and stir beef in large skillet over medium heat until crumbled and brown, about 10 minutes; drain off fat.
- Add bell pepper and onion; cook and stir until tender, about 4 minutes. Stir in potatoes, tomato sauce, water, tomato paste, salt, basil, and pepper.
- Spoon half of mixture into 13 x 9 x 2 inch baking pan or 3 qt baking dish; top with half the cheese. Spoon remaining meat mixture evenly on top of cheese. Cover pan with foil; bake 45 minutes.
- Cut remaining cheese into decorative shapes; place on top of casserole. (We usually do stars, hearts or leaves) Let stand loosely covered until cheese melts, about 5 minutes, then serve.
