This is about as easy as it gets, but was always one of my favorite things my Mom cooked for us as I was growing up. It's one of those dishes that are good to cook if you're short on time or energy!

Ingredients
  • 1 can pink salmon
  • 1 egg
  • 1/2 cup flour
  • 1 1/2 tsp baking powder
  • oil for frying

Directions
  1. Open the can of salmon and drain all but 2 tbsp of the juice, set aside.
  2. Pick out the bones.
  3. Add 1 egg to the salmon and mix it well.
  4. Add 1/2 cup flour, stir til it's well mixed.
  5. To the 2 tbsp juice, add the baking powder. Pour into the salmon mixture and stir.
  6. Shape into patties.
  7. Fry in oil til patties are cooked through and they are golden on both sides.
