Quick Beef Chili Recipe
This chili is suprisingly good for being so quick. Can be made as spicy or as mild as you like. Great topped with a little cheese, some light sour cream, and served with cornbread.

Ingredients
  • 1 pound lean ground beef
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 tsp. black pepper
  • 2 cans (14.5 oz.) Mexi-style stewed or diced tomatoes, with liquid
  • 1 can (15 oz.) red kidney beans, rinsed and drained
  • 1/2 large red onion, chopped
  • 1/4 cup Bueno hot chilies or other spicy green chili
  • 2 tablespoons tomato paste
  • 1 heaping tablespoon chopped cilantro (optional)
  • Dash cayenne pepper (optional)

Directions
  1. In a large nonstick skillet cook the beef, galic, and onions over medium heat until browned; drain fat. Add chili powder, cumin, basil, black pepper, oregano, and cayenne pepper (if using); stir to combine.
  2. Stir in kidney beans, tomatoes, tomato paste, green chili, and cilantro (if using).
  3. If using stewed tomatoes break them up into smaller pieces with a spoon.
  4. Bring to a boil; reduce heat.
  5. Simmer, covered, for 20 minutes.
  6. Serve, topped with a little cheese and a dollop of light sour cream.
