How to make it

  • In a large nonstick skillet cook the beef, galic, and onions over medium heat until browned; drain fat. Add chili powder, cumin, basil, black pepper, oregano, and cayenne pepper (if using); stir to combine.
  • Stir in kidney beans, tomatoes, tomato paste, green chili, and cilantro (if using).
  • If using stewed tomatoes break them up into smaller pieces with a spoon.
  • Bring to a boil; reduce heat.
  • Simmer, covered, for 20 minutes.
  • Serve, topped with a little cheese and a dollop of light sour cream.
