Quick Beef Chili Recipe

Ingredients

1 pound lean ground beef

4 garlic cloves, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon dried basil

1 teaspoon dried oregano

1/4 tsp. black pepper

2 cans (14.5 oz.) Mexi-style stewed or diced tomatoes, with liquid

1 can (15 oz.) red kidney beans, rinsed and drained

1/2 large red onion, chopped

1/4 cup Bueno hot chilies or other spicy green chili

2 tablespoons tomato paste

1 heaping tablespoon chopped cilantro (optional)

Dash cayenne pepper (optional)

Directions

In a large nonstick skillet cook the beef, galic, and onions over medium heat until browned; drain fat. Add chili powder, cumin, basil, black pepper, oregano, and cayenne pepper (if using); stir to combine.

Stir in kidney beans, tomatoes, tomato paste, green chili, and cilantro (if using).

If using stewed tomatoes break them up into smaller pieces with a spoon.

Bring to a boil; reduce heat.

Simmer, covered, for 20 minutes.

Serve, topped with a little cheese and a dollop of light sour cream.
