Panbuttered Grouper With Grand Marnier Apricot Sauce Recipe
This dish can be made with any thick flakey fish. Snow peas steamed with baby carrots sets it off.

Ingredients
  • 4 8oz grouper filets
  • 1/4 cup dried apricots
  • 1cup water
  • 1tbls. sugar
  • 1 large tsp. corn starch
  • 1/4 cup grand marnier
  • 2 tbls. butter
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper

Directions
  1. In small pan cook apricots with water until soft . remove apricots and reserve. Add the sugar to water. combine corn starch to liqueur. transfer all to processor with apricots. puree and keep hot . heat butter in frying pan or skillet fry grouper 3 min each side , season each side salt & pepper. thickness will determine time . transfer to plates garnished with peas and carrots ( snow , Whole baby). Spoon sauce over all and serve.
