How to make it

  • Melt 4 tablespoons butter in heavy small skillet over medium high heat.
  • Add raisins and rum then boil until liquid is reduced to 1/4 cup.
  • Remove from heat and keep warm.
  • Season filets with salt and pepper then dredge in flour shaking off excess.
  • Melt remaining butter in a heavy large skillet over medium high heat.
  • Add filets and fry until cooked through turning once about 4 minutes.
  • Transfer fish to plates then spoon raisins and liquid over and serve.

    the fish you use, Pompano, is readily
    available here in my area!...So could I just
    use another 'white' fish or even Salmon?
