Filet Of Pompano With Raisins And Rum Recipe
FILET OF POMPANO WITH RUM AND RAISINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Massey Estate in Malakoff, Texas in 1992.

Ingredients
  • 6 tablespoons unsalted butter
  • 1/2 cup raisins
  • 1/2 cup dark rum
  • 24 ounces pompano fish
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour

Directions
  1. Melt 4 tablespoons butter in heavy small skillet over medium high heat.
  2. Add raisins and rum then boil until liquid is reduced to 1/4 cup.
  3. Remove from heat and keep warm.
  4. Season filets with salt and pepper then dredge in flour shaking off excess.
  5. Melt remaining butter in a heavy large skillet over medium high heat.
  6. Add filets and fry until cooked through turning once about 4 minutes.
  7. Transfer fish to plates then spoon raisins and liquid over and serve.

This easy but elegant recipe is one that I would really like to try...except, I do not think that
the fish you use, Pompano, is readily
available here in my area!...So could I just
use another 'white' fish or even Salmon?
