Filet of Pompano with Raisins and Rum

- 6 tablespoons unsalted butter shopping list
- 1/2 cup raisins shopping list
- 1/2 cup dark rum shopping list
- 24 ounces pompano fish shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/4 cup all-purpose flour shopping list
How to make it
- Melt 4 tablespoons butter in heavy small skillet over medium high heat.
- Add raisins and rum then boil until liquid is reduced to 1/4 cup.
- Remove from heat and keep warm.
- Season filets with salt and pepper then dredge in flour shaking off excess.
- Melt remaining butter in a heavy large skillet over medium high heat.
- Add filets and fry until cooked through turning once about 4 minutes.
- Transfer fish to plates then spoon raisins and liquid over and serve.
