this yummy banana cake is light and moist and just the right treat to have with a hot cuppa

Ingredients
  • 2 large bananas mashed
  • 1/4 cup of unsalted butter
  • 1/3 cup of sugar
  • 1 egg
  • 1tsp of good vanilla extract or essence
  • 11/4 cup of pastry flour or all purpose
  • 11/4 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1/2 tsp of cinnamon
  • pinch of salt
  • 3/4cup of white chocolate chopped

Directions
  1. cream butter and sugar together in large mixing bowl
  2. add egg ,banana and vanilla and mix well
  3. in another mixing bowl sift all the dry ingredients together
  4. add half of the dry ingredients to banana and mix well
  5. then add the rest of dry mix and the white chocolate and mix altogether
  6. grease a loaf tin spoon in mixture bake at 175 for 50minutes
  7. and to finish drizzle a little melted white chocolate over the top
