Watermelon Injected Pork Tenderloin

- marinade shopping list
- 3 cups diced watermelon meat-needs to yield 2 cups of juice shopping list
- 3 jalapenos-I leave the seeds in for heat shopping list
- 1 tbs. salt shopping list
- 2 cups granulated sugar shopping list
- 1/4 cup Midori or other melon liquer shopping list
- 2 lbs. pork tenderloin shopping list
- salt and pepper shopping list
- watermelon salsa shopping list
- 2 cups watermelon seeded and diced shopping list
- 1 Granny Smith finely diced shopping list
- 1 red onion diced shopping list
- 2 cloves garlic minced shopping list
- 1 mango peeled and diced shopping list
- 2 jalapenos, seeded and diced shopping list
- 1 bunch cilantro leaves shopping list
- salt and pepper shopping list
- juice of 2 limes shopping list
- splash of rice wine vinegar shopping list
How to make it
- Marinade
- Puree the watermelon and the jalapeno, then strain through a sieve or cheesecloth
- Add salt, sugar, and Midori-blend for 2 minutes
- Reserve 1 cup for basting
- Inject throughout or marinate for 24 hours
- Season with salt and pepper and cook to 145 degrees
- Salsa
- Mix all ingredients and serve over sliced pork
