  • Marinade
  • Puree the watermelon and the jalapeno, then strain through a sieve or cheesecloth
  • Add salt, sugar, and Midori-blend for 2 minutes
  • Reserve 1 cup for basting
  • Inject throughout or marinate for 24 hours
  • Season with salt and pepper and cook to 145 degrees
  • Salsa
  • Mix all ingredients and serve over sliced pork
