Watermelon Injected Pork Tenderloin Recipe
This is a wonderful summer meal. I like heat, so the use of fresh jalapeno combined with sweet fruits is refreshing. If you inject the pork the melon and jap flavor are subtle, and the pork is extremely moist.

Ingredients
  • Marinade
  • 3 cups diced watermelon meat-needs to yield 2 cups of juice
  • 3 jalapenos-I leave the seeds in for heat
  • 1 tbs. salt
  • 2 cups granulated sugar
  • 1/4 cup Midori or other melon liquer
  • 2 lbs. pork tenderloin
  • salt and pepper
  • Watermelon Salsa
  • 2 cups watermelon seeded and diced
  • 1 Granny Smith finely diced
  • 1 red onion diced
  • 2 cloves garlic minced
  • 1 mango peeled and diced
  • 2 jalapenos, seeded and diced
  • 1 bunch cilantro leaves
  • salt and pepper
  • Juice of 2 limes
  • splash of rice wine vinegar

Directions
  1. Marinade
  2. Puree the watermelon and the jalapeno, then strain through a sieve or cheesecloth
  3. Add salt, sugar, and Midori-blend for 2 minutes
  4. Reserve 1 cup for basting
  5. Inject throughout or marinate for 24 hours
  6. Season with salt and pepper and cook to 145 degrees
  7. Salsa
  8. Mix all ingredients and serve over sliced pork
