How to make it

  • Chop the onions and saute in olive oil until mostly transparent.
  • Chop the tomato, carrot, "sausage" and add to the onions. Add about half of the feta cheese. Let the mixture simmer over medium heat for about 5 minutes. Add honey mustard and let simmer for another 5 - 10 minutes, stirring occasionally.
  • Spread the rest of the feta cheese over the bowls of lettuce.
  • Add salt and pepper to mixture to taste. Let simmer until carrots are softish.
  • Pour mixture over lettuce.

    Haha, tell me how it goes! I certainly liked it, but I'm aware of the fact that it might not be as good as I thought it was. I hope your daughter likes it! The soy-based ground sausage is a great breakfast, too, especially in on an english muffin with eggs and some cheese...

    Gotta admit; it sounds "different" but i'm adventurous so i'll make it for my daughter who's vegetarian. Don't think i'll tell her the name, tho, until she's finished eating! LOL!
