Chocolate Mint Meringue Cheesecake Recipe
Another estate sale treasure that I picked up about 5 years ago. I don't make this often because it is so rich, but when I do make it, it goes fast. Enjoy

Ingredients
  • 1 cup chocolate wafer crumbs
  • 3 tablespoons margarine melted
  • 2 tablespoons granulated sugar
  • 24 ounces cream cheese softened
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 1 cup mint chocolate chips melted
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 7 ounces marshmallow cream

Directions
  1. Combine crumbs, margarine and 2 tablespoons sugar then press onto bottom of spring form pan.
  2. Bake at 350 for 10 minutes.
  3. Combine cream cheese and sugar mixing at medium speed on electric mixer until well blended.
  4. Add eggs one at a time mixing well after each addition.
  5. Blend in melted mint chocolate and vanilla then pour over crust.
  6. Bake at 350 50 minutes then loosen from rim of pan and cool before removing rim then chill.
  7. Beat egg whites until soft peaks form then gradually add marshmallow cream.
  8. Beat until stiff peaks form then carefully spread over top of cheesecake to seal.
  9. Bake at 450 for 4 minutes or until lightly browned.
