Crustless Quiche Shrimp Bacon Mushroom Recipe

Ingredients
  • 8 large eggs
  • 1 cup regular mayo
  • 1/2 to 1 cup half and half, or soy milk, depending on
  • desired consistency
  • 2 cups swiss cheese grated
  • my favorite:
  • 6 oz lean turkey bacon, cooked and crumbled
  • 8 oz small fresh or frozen shrimp
  • 8 oz sliced bella mushrooms
  • 2 garlic cloves crushed
  • seasonings as desired - i don't add salt or pepper
  • i've used combinations of spinach, onions, broccoli, mushrooms
  • lean beef, shrimp, sausage, kielbasa
  • a kids favorite is lean beef with cheddar
  • use your imagination and make it different every time.

Directions
  1. cook bacon in skillet, cool and crumble
  2. sautee shrimp in olive oil and crushed garlic, set aside
  3. sautee mushrooms - using fresh uncooked causes too much
  4. water in the quiche
  5. in a large bowl, hand whip the eggs
  6. with a spatula mix in the mayo until smooth
  7. add the cheese and mix
  8. 9 inch quiche dish
  9. 350 F 45-50 minutes until raised, golden brown, with splits
  10. across the top.
  11. starting with the liquid mix, layer the ingredients, and top with
  12. a bit of cheese.
