A sweet and tasty zucchini bread made with whole grains. Mmm mmm good!!

Ingredients
  • 3 eggs
  • 1 cup oil
  • 2 cups brown sugar OR 1 cup maple syrup OR 1 cup honey OR a combo!
  • 2+ cups raw zucchini
  • 2 ½ cups whole wheat flour
  • ½ wheat germ (or more flour)
  • 3 tsp. Cinnamon
  • 1 tsp. vanilla
  • 1 tsp. Salt
  • 1 tsp. Baking powder
  • 1 tsp. Baking soda
  • 1 cup walnuts (optional)

Directions
  1. Beat eggs until light and fluffy. Add oil, zucchini, vanilla, and sugar mix well. Add dry ingredients and nuts. Grease and flour 2 bread pans.
  2. Bake 1 hour at 325. Makes 2 loafs.
