Turkey And Shrimp Jambalaya Recipe
TURKEY AND SHRIMP JAMBALAYA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lynch Estate in Garland, Texas in 1994.

Ingredients
  • 1/2 pound sausage sliced
  • 1 pound raw turkey breast diced in 1/2" pieces
  • 2 cups white onions chopped
  • 4 cloves garlic minced
  • 1 bell pepper chopped
  • 2 stalks celery chopped
  • 3 bay leaves
  • 1/2 teaspoon dry thyme
  • 2 cups long grain rice converted
  • 1 pound can tomatoes crushed with liquid
  • 2 cups hot chicken stock
  • 1 pound raw peeled shrimp
  • 4 green onions sliced
  • 1/4 cup parsley chopped
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 3 tablespoons hot sauce

Directions
  1. Sauté hot sausage and turkey in oil for several minutes then in same oil cook onions and garlic.
  2. Add bell pepper and celery then cook until tender then add bay leaves and thyme.
  3. Add rice and stir until coated in oil then add tomatoes and stock then bring to boil.
  4. Cover and simmer 30 minutes then add shrimp and cook an additional 20 minutes.
  5. Just before serving add green onion, parsley, salt, pepper and hot sauce.
