Blackberry Nut Butter Cake Recipe
BLACKBERRY NUT BUTTER CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lynch Estate in Garland, Texas in 1994.

Ingredients
  • 6 eggs
  • 1 cup butter softened
  • 1-1/2 cups granulated sugar
  • 3/4 cup seedless blackberry jam
  • 1 tablespoon vanilla extract
  • 1/4 cup dark rum
  • 1 cup minus 1 tablespoon all purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup ground walnuts
  • 3/4 cup ground pecans

Directions
  1. Preheat oven to 350 then grease and flour a tube pan.
  2. Separate eggs then beat egg white until stiff and set aside.
  3. In large bowl beat butter with sugar until thoroughly creamed.
  4. Beat in egg yolks, jam, vanilla extract and rum.
  5. In a small bowl stir together flour and baking powder then beat into creamed mixture.
  6. Stir in nuts then stir about 1/3 of the beaten egg whites into batter then fold rest in gently.
  7. Pour batter into prepared pan and bake at 350 for 70 minutes.
  8. Transfer to a wire tack to cool completely.
