CREDO PORK CON SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.

Ingredients
  • 2 tablespoons red chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon garlic powder
  • 1-1/2 teaspoons onion powder
  • 1/2 teaspoon salt
  • 2-1/2 pounds pork tenderloins
  • Salsa:
  • 1/4 cup white wine vinegar
  • 1 tablespoon dark brown sugar
  • 1 cup fresh pineapple chunks
  • 1 papaya peeled and chopped
  • 2 cups cantaloupe chunks
  • 4 green onions minced
  • 2 sprigs fresh cilantro minced

Directions
  1. Preheat oven to 350.
  2. Combine seasonings then rub all over sides of pork tenderloins.
  3. Arrange tenderloins in shallow baking dish.
  4. Cover and set aside for 15 minutes at room temperature then uncover and bake 45 minutes.
  5. While pork is cooking prepare salsa.
  6. Whisk vinegar and sugar together in bowl then add remaining ingredients and toss to combine.
  7. Cover and refrigerate then serve alongside pork tenderloins.
