IRISH HOT CHOCOLATE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cannon Estate in Arlington, Texas in 1992.

Ingredients
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup unsweetened cocoa powder
  • 6 ounces semisweet chocolate very finely chopped
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons whiskey

Directions
  1. In medium heavy saucepan combine milk, cream and cocoa powder.
  2. Warm over medium heat stirring to dissolve cocoa.
  3. Add chopped chocolate and stir until it melts completely.
  4. Bring mixture to simmer but do not boil.
  5. Return heat to medium and cook 5 minutes stirring occasionally.
  6. Remove saucepan from heat and stir in vanilla.
  7. Stir mixture to cool briefly then pour into serving cups.
  8. Stir 1 teaspoon whiskey in each cup.
