How to make it

  • Rinse and clean crabs well.
  • Place n a large pot of lightly salted water and boil until meat is opaque and cooked through/
  • Let crabs cool completely then remove crab meat and reserve.
  • Season crab meat with a mixture of the chives, celery, lime juice, garlic, onion, and pimento.
  • Meanwhile warm the vegetable oil in a heavy skillet or pot over medium high heat.
  • Add carrots and onions then cook until onions are clear and carrots are soft.
  • Add tomatoes, curry powder, salt and pepper then cook stirring constantly for 8 minutes.
  • Add coconut milk and rice the let mixture come to boil.
  • Reduce heat cover and simmer for 30 minutes then add crab meat to mixture and stir.
  • Let meat warm through and allow remaining liquids to be absorbed by the rice then serve warm.
