Summertime... This cross between a soda and a cocktail epitomizes a summer drink to me. Just the right amount of sweet and adult.

Ingredients
  • 1/2 cup water
  • 1/2 cup sugar
  • Raspberry or raspberry-yogurt ice cream or sherbet
  • 1 chilled bottle prosecco, champagne or sparkling white wine
  • Fresh raspberries

Directions
  1. Boil the water and sugar together in a small saucepan 5 minutes.
  2. Chill this thoroughly.
  3. For each serving:
  4. In a tall glass, place a few raspberries at the bottom.
  5. Add one small scoop ice or sherbet.
  6. Place a few more raspberries on top.
  7. Repeat with another scoop and more raspberries.
  8. Drizzle with 1 TBS sugar syrup.
  9. Fill the glass with sparkling wine.
  10. Serve with a long spoon and a straw.
  11. Expect raves--- even from men!
