GARLIC STUDDED DIJON PORK TENDERLOIN Recipe
I love pork tenderloin. It can be fixed so many ways and this has turned out to be one of my family's favorites.

Ingredients
  • 1 1/2 tbsp white wine vinegar
  • 2 tsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/8 tsp black pepper
  • salt, to taste
  • 1 1/2 pounds pork tenderloin
  • 4 garlic clove, halved lengthwise

Directions
  1. Preheat oven to 400 degrees.
  2. In a small mixing bowl, whisk together vinegar, mustard, oil and spices.
  3. Place tenderloin in an airtight container and pour marinade over pork, coating evenly, let sit for at least 30 minutes in the refrigerator.
  4. Grease a 9x13-inch baking dish, remove pork from marinade and place in dish.
  5. Cut 8 slits along top of pork and stuff a garlic clove half into each slit. Pour reserved marinade over pork and bake for 45 minutes. Remove from oven and let rest for 5 minutes before slicing.
