How to make it

  • Preheat oven to 400 degrees.
  • In a small mixing bowl, whisk together vinegar, mustard, oil and spices.
  • Place tenderloin in an airtight container and pour marinade over pork, coating evenly, let sit for at least 30 minutes in the refrigerator.
  • Grease a 9x13-inch baking dish, remove pork from marinade and place in dish.
  • Cut 8 slits along top of pork and stuff a garlic clove half into each slit. Pour reserved marinade over pork and bake for 45 minutes. Remove from oven and let rest for 5 minutes before slicing.
