Cheezy Spinach Artichoke Dip Recipe
This is perfect Football snack food that takes well to re-heating and fridge. It only takes one pot.

Ingredients
  • (1) 8oz pkg frozen Spinach OR 1/2 bunch fresh picked and washed Spinach
  • (1) 10oz can Campbell's Cream of Mushroom Soup (NOT condensed)
  • (1) 8oz pkg shredded Cheddar Cheese
  • (1) 8oz pkg shredded "Pizza" cheese mix (it doesn't matter what brand so long as Mozzarella is included)
  • 2 Artichoke Hearts (I get a small glass container of Italian flavored ones)
  • 1 pinch of Paprika
  • 1/2 tbs Ground Pepper
  • 1 tsp Sea Salt or Kosher Salt
  • Table Salt

Directions
  1. Wash the spinach (if loose leafed).
  2. Take large pot and fill with enough water to cover the Spinach. Add a little Table Salt to the water.
  3. Boil Spinach until mostly done (there's still heat to be involved so no worries).
  4. Drain Spinach (By this time the Spinach should be falling apart all by itself. No need to get it completely dry, just not sloshing around is fine.).
  5. Put the Cream of Mushroom Soup in the pot with the now-cooked Spinach along with the Sea Salt, Pepper, and Paprika. Warm on Medium heat for 5 minutes stirring occasionally to keep things from burning.
  6. Cut up the Artichoke Hearts and put them in the pot too.
  7. Add Cheeses and stir occasionally until thoroughly melted.
  8. Serve with Tortilla chips.
