Steamed Squash Tossed In Fresh Herbs And Olive Oil

- 4-6 yellow squash or zucchini (can use all yellow crookneck squash or all zucchini, or mixed) shopping list
- 1/2 cup loosely packed mixed fresh herb leaves, such as basil, marjoram, thyme, oregano, and tarragon shopping list
- 6 tablespoons olive oil shopping list
How to make it
- Wash squash, cut into 1 inch rounds
- Place water in the bottom of a vegetable steamer, bring to a boil
- Add squash to the steamer basket, cover
- Cook to soften, about 8 minutes
- While squash is steaming, coarsely chop herbs
- In large bowl, whisk them with olive oil
- Transfer the steamed squash to bowl
- Toss gently and serve immediately
- May add a little garlic, pepper, cayenne, etc.
