Spinach Spaghetti Pie

- 6 oz. uncooked spaghetti shopping list
- 5 tablespoons butter, DIVIDED shopping list
- 1/3 c. plus 1 tablespoon Parmesan, DIVIDED shopping list
- 2 eggs, well beaten shopping list
- 10 oz. package of frozen spinach, thawed, drained shopping list
- 1 c. cottage cheese shopping list
- 3/4 c. ricotta cheese shopping list
- 1/4 c. chopped onion shopping list
- 1 teaspoon dill weed shopping list
- 3/4 teaspoon Tabasco, DIVIDED shopping list
- 3/4 t. salt, DIVIDED shopping list
- 1/2 pound sliced fresh mushrooms shopping list
- 3 tablespoons flour shopping list
- 1 c. milk shopping list
- optional: feta cheese, salami shopping list
How to make it
- Cook and drain spaghetti. Mix with 2 tablespoons butter, 1/3 c. Parmesan, eggs;
- Press into bottom of 10 inch pie pan to form the crust;
- Combine spinach, cottage cheese, ricotta, onion, dill, 1/2 teaspoon Tabasco, 1/2 teaspoon salt and spoon into pie shell;
- Place mushrooms on top;
- In saucepan combine 3 tablespoons butter, 1/4 teaspoon salt, 1/4 teaspoon Tabasco, and flour;
- Cook at low 1 minute;
- Gradually add milk until it boils and is thickened;
- Pour over pie;
- Sprinkle with remaining Parmesan;
- Bake at 350 for 10 minutes;
- Cover with foil and bake 20 minutes more;
- Cool 5 minutes before slicing.
