POLYNESIAN CHICKEN SALAD

This chilled chicken salad is a real treat on hot summer days. Serve on croissants or with assorted melons. Also very pretty served in a cantaloupe half.
Ingredients
- 2 c. cooked chicken, diced shopping list
- 1 1/2 c. pineapple tidbits shopping list
- 1/2 c. toasted chopped pecans shopping list
- 1/2 c. mayo shopping list
- 1/2 tsp. salt shopping list
- 1 1/2 c. diced celery shopping list
- 1/4 c. shredded carrot shopping list
- 1/4 c. sour cream shopping list
- 1 tsp. fresh lemon juice shopping list
How to make it
- Blend mayo, sour cream, salt and lemon juice in a small bowl.
- In a large bowl, combine chicken, pineapple, celery, carrots and nuts.
- Pour dressing over chicken mixture and toss to coat. Chill thoroughly.
- May substitute white seedless grapes for pineapple.

Very nice chicken salad ideal for summer. I admit to not measuring the ingredients and just 'eyeballing' it according to my taste.
