How to make it

  • Preheat the oven to hot (200C). Cut each breast into halves lengthwise. Season with salt and pepper. Place chicken in shallow ovenproof dish in one layer. Drizzle with olive oil. Cover with foil and bake for about 20 minutes. Remove from the oven and increase temperature to very hot (230C).
  • Remove the foil and spread each portion with 1 tspn mustard, then cover with yoghurt. Sprinkle 1 tspn of cheese on each and return to oven. Cook, uncovered, for further 10 minutes, or until light golden.
