MUSTARD CHICKEN IN YOGHURT Recipe
I love this dish as it's so simple but tastes so special. Great for dinner party or just for you! I divide the recipe to make it for one person.

Ingredients
  • 4 chicken half breasts, trimmed & boned
  • salt and freshly ground pepper
  • 1 tbspn olive oil
  • 200g plain yoghurt (I use Greek-style)
  • 4 tspns French mustard (can also use Dijon or wholegrain)
  • 4 tspns grated Parmesan cheese

Directions
  1. Preheat the oven to hot (200C). Cut each breast into halves lengthwise. Season with salt and pepper. Place chicken in shallow ovenproof dish in one layer. Drizzle with olive oil. Cover with foil and bake for about 20 minutes. Remove from the oven and increase temperature to very hot (230C).
  2. Remove the foil and spread each portion with 1 tspn mustard, then cover with yoghurt. Sprinkle 1 tspn of cheese on each and return to oven. Cook, uncovered, for further 10 minutes, or until light golden.
