Ambrosia Fruit Custard Recipe

Ingredients
  • 1 package (4 serving size) sugar free instant vanilla pudding
  • 1 tbsp lemon juice
  • 1 tsp grated lemon peel
  • 1/2 tsp coconut or almond extract
  • 1 8 oz can pineapple tidbits, drained
  • 1 cup assorted sliced fruit (kiwi, strawberries, orange)
  • 1/4 cup mini marshmallows or flaked coconut

Directions
  1. Make pudding according to package directions. Stir in lemon juice, peel and extract. Reserve 1/4 cup for topping. Spoon remaining pudding equally into 4 dessert bowls. Toss remaining ingredients. Spoon on top of pudding. Drizzle with reserved pudding.
