A great reduction of a warm roasty Old Ale with a spice mixture that sweetens and adds complexity.

Ingredients
  • 1 12oz bottle of Great Divide Hibernation Ale*
  • 1/4 lb. Brown Sugar
  • 3 dashes powdered nutmeg or shaved equivalent
  • 1 tsp cinnamon
  • (clove and other spices optional as per dish)
  • *This is a dark roasty Old Ale, if substituting please use similar malt profile

Directions
  1. Either in a saucepan or into a baking dish with a meat already at cooking temp, pour in about 1/2 of the bottle of beer
  2. Mix Brown sugar with other spices in a bowl and sprinkle into beer a few pinches at a time
  3. Add more beer as the first half begins to reduce slightly
  4. As the beer eventually begins to reduce, begin adding more and more of the sugar and spice mixture
  5. The beer and sugar will eventually turn into a viscous reduction, once it is to a thickness of your liking serve over grilled or roasted meats, particularly smoked pork products. Enjoy with a glass of the same beer you used to reduce or a great pumpkin ale, like Ichabod.
