How to make it

  • Combine soy sauce and honey. set aside
  • Heat oil in skillet on medium high heat
  • Season chicken with 1/2 tsp pepper, cook about 3 minutes stirring occasionally
  • Lower to medium heat, stir in ginger and garlic
  • Add scallions and cook one minute
  • Stir in water chestnuts and 1/2 soy sauce mixture and cook chicken through
  • Remove from heat and sprinkle with cashews
  • Serve with lettuce and remaining sauce for drizzling
