do you have smoker? if not you can use a oven
ribs-trim off excess fat,and bone,and skirt meat
pull membraine off bone side.
cover with your favorite rub, wrap in saran wrap
put in the frig over nite
.the next day put in the smoker/oven at 225 degrees. sprits with apple juice every hour
for 3 hrs
at end of 3 hrs. wrap in foil , with apple juice in the foil
cook 2 hrs
after 2 hrs uncover this last hour is for your basting, whatever sauce you like
during the 3 hr stage watch for meat to pull back
1/8 - 1/4 inch from the ends of the bone if this happens foil them it may be less than 3 hrs
the 2 hr stage is the critacle stage. to long in foil meat will fall apart, not long enough
it will be tough
last stage is for sauce
what you want, is when you bite it, you give just a tug, meat will come off
