Hot Fish In Tomatoes Recipe
This is one of the traditional Malay dishes which is usually nice to eat with rice. It is hot ...so please be ready with a tissue or more.

Ingredients
  • 500 mg fish fillets (whiting/ basa), washed and dry
  • 2 tablespoon of chili paste
  • 1 onion and 3 cloves garlic (mashed or blend together)
  • 2 tables spoon dried prawn (mashed and combined with onion)
  • 5 medium size tomatoes, diced
  • 11/2 cup water
  • 3 - 4 tablespoon canola oil
  • 1 cup vietnamese basil leaves (sweet basil), washed and dry
  • salt

Directions
  1. Cut each fillet into two and put aside
  2. Heat oil in a medium shallow pan.
  3. Add in the mashed ingredients (onion, garlic and dry prawn) and chilli paste.
  4. Stir occasionally until there is no more acces water (you can see the oil separated from the other ingredients)
  5. Add in tomatoes and cover. Stir occasionally for 10 minutes or until tomatoes really cooked.
  6. Pour in the water and bring to boil.
  7. Add in the fillet. Stir occasionally and bring to boil.
  8. Add the vietnamese basil, stir and season to taste.
  9. Keep it boil in medium heat for 5 minutes before turn down the stove.
  10. Lastly add vietnamese basil, stir
