Ingredients

1 lg. vidalia onion,trimmed and grated(1c)

8 oz. sharpcheddar cheese,grated

1pkg.(8oz) light cream cheese

1tsp garlic powder

1/4tsp ground cayenne pepper

chopped scallion.for garnish(optional)

assorted crackers

Directions

In med-size cast iron or oven safe skillet,combine onion,cheeses,garlic powder and cayenne pepper. Cook over grill heated to medium heat,stirring till cheese is melted,about 5 mins. Garnish with scallions,if desired. Serve with crackers.
