Very Different Stuffed Zucchini Boats Recipe

	Tillia / All my dishes 1 year, 4 months ago I needed a new twist on stuffed zucchini/zucchini boats, because you can only have the beef and rice mixture so many times. This is what I came up with. I think I will try it for stuffed peppers too. Prep:15m Cook:15m Servings:0	Tillia

Ingredients

-Zucchini

-Ham steaks, cut into small chunks

-rice, cooked

-crushed pineapple, w/ juice

-hot peppers, finely chopped/hot pepper flakes

-Your favorite cheese mix, shredded

Note: I don't include amounts as you could make this for 1 or 20. For 4 servings, I used 1 ham steak, 1C cooked rice, 2 zucchini, and 1, 14 oz can pineapple.

The peppers are optional, and to your taste.

Directions

-Cut Zucchini in half, length- wise.

-Microwave until tender.

-Meanwhile, heat chopped ham, and pineapple, juice too.

-Add in rice.

-Add in pepper choice.

-Scoop out zucchini flesh, chop, add to meat/rice.

-Spoon mixture back into zucchini shells.

-Top w/ favorite shredded cheese mix.

-Bake or Microwave till cheese melts.
