How to make it

  • Heat the oil in a wok on high heat
  • Add mustard seeds and wait till they splutter
  • Add asafoetida and turmeric powder
  • Add fenugreek seeds and fry them crisp (takes 20-30 seconds)
  • Add garlic cloves and fry them for a minute, till they turn light brown
  • Add chillies and fry them till they look a little crispy
  • Add the pumpkin and stir fry it on high heat for 5-6 minutes
  • Add jaggery and salt to taste
  • Cover and cook on low heat till the pumpkin is tender.
  • Serve with Indian bread
