Red Pumpkin

- Red pumpkin cut into cubes or 1 inch strips, 250 gm shopping list
- Asafoetida, 1 pinch shopping list
- turmeric powder, 1/2 tsp shopping list
- mustard seeds, 1 tsp shopping list
- fenugreek seeds, 1 tsp shopping list
- Peeled garlic, 6-8 cloves shopping list
- Green Chillies cut into pieces or slit, 2-3 shopping list
- jaggery or brown sugar, 1 tsp shopping list
- salt, as per taste shopping list
- vegetable oil, 1 tbsp shopping list
How to make it
- Heat the oil in a wok on high heat
- Add mustard seeds and wait till they splutter
- Add asafoetida and turmeric powder
- Add fenugreek seeds and fry them crisp (takes 20-30 seconds)
- Add garlic cloves and fry them for a minute, till they turn light brown
- Add chillies and fry them till they look a little crispy
- Add the pumpkin and stir fry it on high heat for 5-6 minutes
- Add jaggery and salt to taste
- Cover and cook on low heat till the pumpkin is tender.
- Serve with Indian bread
