Ingredients
  • Red Pumpkin cut into cubes or 1 inch strips, 250 gm
  • Asafoetida, 1 pinch
  • Turmeric powder, 1/2 tsp
  • Mustard seeds, 1 tsp
  • Fenugreek seeds, 1 tsp
  • Peeled garlic, 6-8 cloves
  • Green Chillies cut into pieces or slit, 2-3
  • Jaggery or brown sugar, 1 tsp
  • Salt, as per taste
  • Vegetable oil, 1 tbsp

Directions
  1. Heat the oil in a wok on high heat
  2. Add mustard seeds and wait till they splutter
  3. Add asafoetida and turmeric powder
  4. Add fenugreek seeds and fry them crisp (takes 20-30 seconds)
  5. Add garlic cloves and fry them for a minute, till they turn light brown
  6. Add chillies and fry them till they look a little crispy
  7. Add the pumpkin and stir fry it on high heat for 5-6 minutes
  8. Add jaggery and salt to taste
  9. Cover and cook on low heat till the pumpkin is tender.
  10. Serve with Indian bread
