Stoplight Salad

- 151/2oz.can black beans shopping list
- 1med. red pepper,cut in 1/2" dice shopping list
- 11/2c corn kernals,scraped from 2 ears of corn shopping list
- 11/2c frozen corn,defrosted shopping list
- 11/2c frozen shelled edamame,defrosted shopping list
- 1/4 to 1/3c balsamic vinegar shopping list
- 1/4c olive oil shopping list
- 2 to 3 cloves garlic shopping list
- salt and pepper to taste shopping list
How to make it
- In a large bowl,combine beans,pepper,corn and edamame. In a small bowl,or a jar,combine vinegar,oil,garlic and seasonings. WWhisk together ,or in a jar cover and shake. Pour over veggie mixture and stir. Season to taste. Cover and refrigerate for at least 2 hours,or up to a day. Before serving,check to see if more seasoning is needed.
