Chicken Enchiladas Recipe
Yum Yum! This dish is yummy for the whole family. And goes great with warm rolls and Spanish rice. I've even fed it to toddlers who love it!

Ingredients
  • 3 reg. sized cans of cream of chicken soup
  • 1 small tub of sour cream
  • 2 cups mozzarella cheese
  • 1 small can mild diced chilies
  • 2 Chicken breasts
  • 1 Package Large Tortillas
  • 1 More cup of mozzarella cheese for topping.

Directions
  1. Chicken Prep.
  2. Pre heat oven to 350
  3. Cook Chicken for 35-40 min.
  4. Cut into small cubes.
  5. Enchiladas
  6. Pre Heat oven to 350
  7. Mix together all ingredients and cubed chicken except for the 1 cup of cheese.
  8. With a small spoon, about 4 tbs into each tortilla and roll. Leave enough filling to spread over top of all the finished tortillas. When pan is full, spread the rest of the filling evenly over top and then add the left over cheese on top of that.
  9. Cook for 20-25 min.
  10. Let 'em cool off a bit before you give them to the kids, then dig in and enjoy! Yum Yum!
