How to make it

  • In large nonstick frying pan heat oil.
  • Add onion, garlic and pumpkin then sauté until onion have softened.
  • If using canned pumpkin add with sherry and broth and simmer 8 minutes.
  • Add beans, salt, cumin and thyme then continue to simmer until beans are heated through.
  • Garnish with green onions.
