Oyster Artichoke Soup Recipe
Great on a cold fall evening, elegant enough to serve to guests!

Ingredients
  • 1 stick butter
  • 1 onion, chopped
  • 1 bunch shallots, chopped
  • 1/2 bunch parsley, chopped
  • 2 Tablespoons flour
  • 1 can cream of mushroom soup
  • 1 pint oysters
  • 1 cup liquid from oysters (use bottled clam juice if not enough juice to make 1 cup of liquid)
  • 1 package frozen artichoke hearts

Directions
  1. Melt butter, saute onion, shallots and parsley. Stir in flour. Add mushroom soup, oyster liquid and artichoke hearts. Add oysters just before serving. Cook until oysters curl.
