Thai Coconut Pea Soup

- 2 cans, coconut milk ( not cream of coconut ) shopping list
- 1 large pkg fresh frozen peas ( 40 oz ) shopping list
- 1 large onion chopped shopping list
- 1 piece ( 1 inch ) of ginger grated or to taste shopping list
- 1 small bunch of Thai or regular basil shopping list
- 1 bunch of chives or scallions chopped shopping list
- 1 large garlic clove minced shopping list
- salt and pepper to taste shopping list
How to make it
- Prep time does not include chilling
- Thaw peas, cover with water and heat about 5 minutes until hot and drain well.
- Meanwhile in a large pot with a bit of peanut oil, saute onion, ginger and till tender, add the garlic, chives and basil and cook and stir a few minutes longer.
- Into the pot add the cans of coconut milk and bring to a boiil, stir in the peas and bring to a boil again.
- Remove from heat, puree in a blender until smooth ,in batches.
- Season to taste.
- Add more fresh ginger to soup if desired.
- Either serve this soup warm or well chilled.
- Either way it's terrific!
