How to make it

  • Prep time does not include chilling
  • Thaw peas, cover with water and heat about 5 minutes until hot and drain well.
  • Meanwhile in a large pot with a bit of peanut oil, saute onion, ginger and till tender, add the garlic, chives and basil and cook and stir a few minutes longer.
  • Into the pot add the cans of coconut milk and bring to a boiil, stir in the peas and bring to a boil again.
  • Remove from heat, puree in a blender until smooth ,in batches.
  • Season to taste.
  • Add more fresh ginger to soup if desired.
  • Either serve this soup warm or well chilled.
  • Either way it's terrific!
