Sweet Red Bean Soup Recipe

Ingredients
  • 8oz(1-1/2 Cups) Dried Chinese Red Beans(adzuki) available in Asian markets
  • 1 Tablespoon Rice
  • 3 Pieces of Dried Tangerine Peel
  • 3/4 Cup Brown Sugar(or) Rock Sugar available in Asian markets

Directions
  1. In a large pot,bring 10 cups water to boil.
  2. Add red beans and remove from heat.Let soak 1 hour.
  3. Add Rice and tangerine peel to beans.
  4. Bring to a boil,reduce heat to low,cover,and simmer until beans break up,about 2 hours.
  5. Add sugar,stir to dissolve, and serve hot or cold.
