Gummy Cake

- 2 Sticks unsalted butter,room temperature shopping list
- 2 Cups sugar shopping list
- 6 eggs shopping list
- 1-1/2 Cups milk shopping list
- 1-1/2 Cups water shopping list
- 1 Pound Sweet rice flour(Available in Asian Markets) shopping list
- 4 ounces flaked coconut shopping list
How to make it
- Preheat oven to 325 degrees
- Grease an 8x10x2" Glass baking dish with 1 tablespoon of butter.
- In a bowl,beat remaining butter with sugar until light and fluffy.
- Add eggs,1 at a time,beating well after each addition.
- In a large measuring cup,combine milk and water.
- Divide rice flour into 3 batches.
- Add one-third flour to batter,stir well.
- Add half of liquid and stir in before adding another one-third of flour.
- Stir to blend.
- Add remaining liquid,blend,and then add remaining flour.
- Stir until batter is smooth.
- Fold in 3 ounces of coconut.
- Pour batter into baking dish,bake 10 minutes.
- Remove from oven,sprinkle remaining coconut evenly over top.
- Return to oven and continue baking until top is light brown,about 50 minutes longer.
- Remove cake from oven and let cool completely.Cut into squares to serve.
