How to make it

  • Preheat oven to 325 degrees
  • Grease an 8x10x2" Glass baking dish with 1 tablespoon of butter.
  • In a bowl,beat remaining butter with sugar until light and fluffy.
  • Add eggs,1 at a time,beating well after each addition.
  • In a large measuring cup,combine milk and water.
  • Divide rice flour into 3 batches.
  • Add one-third flour to batter,stir well.
  • Add half of liquid and stir in before adding another one-third of flour.
  • Stir to blend.
  • Add remaining liquid,blend,and then add remaining flour.
  • Stir until batter is smooth.
  • Fold in 3 ounces of coconut.
  • Pour batter into baking dish,bake 10 minutes.
  • Remove from oven,sprinkle remaining coconut evenly over top.
  • Return to oven and continue baking until top is light brown,about 50 minutes longer.
  • Remove cake from oven and let cool completely.Cut into squares to serve.
