Bran And Applesauce Loaf Recipe
This loaf is what I consider to be on the healthy side. Applesauce and yogurt are the secrets to keeping this loaf moist.

Ingredients
  • 1 cup (250 mL) organic whole wheat flour
  • 3/4 cup (175 mL) natural wheat bran
  • 1/2 cup (125 mL) brown sugar (not packed)
  • 2 tsp. (10 mL) cinnamon
  • 1 tsp. (5 mL) baking powder
  • 1 tsp. (5 mL) baking soda
  • 1 egg, lightly beaten
  • 1 cup (250 mL) organic applesauce - unsweetened
  • 1/2 cup (125 mL) yogurt - plain
  • 2 Tbsp. (25 mL) 100% pure safflower oil
  • Note: Sometimes I toss in a handful of plump golden raisins or chopped dates or plums.

Directions
  1. Preheat oven to 375°F (190°C).
  2. Spray 8 X 4 inch (1.5 L) loaf pan with canola oil cooking spray.
  3. In large bowl, blend together with a whisk, flour, bran, brown sugar, cinnamon, baking powder and baking soda.
  4. In another bowl, using a wooden spoon, stir together egg, applesauce, yogurt and oil.
  5. Stir into bran mixture until just moistened.
  6. Be sure not over mix.
  7. Pour batter into prepared loaf pan.
  8. Bake in center of oven for 35 to 40 minutes or until tester inserted in center comes out clean.
  9. Cool in pan on wire rack for 12 minutes.
  10. Remove from pan to cool fully.
