How to make it

  • Preheat oven to 375°F (190°C).
  • Spray 8 X 4 inch (1.5 L) loaf pan with canola oil cooking spray.
  • In large bowl, blend together with a whisk, flour, bran, brown sugar, cinnamon, baking powder and baking soda.
  • In another bowl, using a wooden spoon, stir together egg, applesauce, yogurt and oil.
  • Stir into bran mixture until just moistened.
  • Be sure not over mix.
  • Pour batter into prepared loaf pan.
  • Bake in center of oven for 35 to 40 minutes or until tester inserted in center comes out clean.
  • Cool in pan on wire rack for 12 minutes.
  • Remove from pan to cool fully.
