Bran And Applesauce Loaf

- 1 cup (250 mL) organic whole wheat flour shopping list
- 3/4 cup (175 mL) natural wheat bran shopping list
- 1/2 cup (125 mL) brown sugar (not packed) shopping list
- 2 tsp. (10 mL) cinnamon shopping list
- 1 tsp. (5 mL) baking powder shopping list
- 1 tsp. (5 mL) baking soda shopping list
- 1 egg, lightly beaten shopping list
- 1 cup (250 mL) organic applesauce - unsweetened shopping list
- 1/2 cup (125 mL) yogurt - plain shopping list
- 2 Tbsp. (25 mL) 100% pure safflower oil shopping list
- Note: Sometimes I toss in a handful of plump golden raisins or chopped dates or plums. shopping list
How to make it
- Preheat oven to 375°F (190°C).
- Spray 8 X 4 inch (1.5 L) loaf pan with canola oil cooking spray.
- In large bowl, blend together with a whisk, flour, bran, brown sugar, cinnamon, baking powder and baking soda.
- In another bowl, using a wooden spoon, stir together egg, applesauce, yogurt and oil.
- Stir into bran mixture until just moistened.
- Be sure not over mix.
- Pour batter into prepared loaf pan.
- Bake in center of oven for 35 to 40 minutes or until tester inserted in center comes out clean.
- Cool in pan on wire rack for 12 minutes.
- Remove from pan to cool fully.
